The Sickos Committee Weekly Food Fusions - Week 1 Edition - TCU vs UNC
Here at the Sickos Committee, we’re big fans of weird ballpark and stadium food combinations. We love the gigantic portions or weird combinations of food and even things that seem really humanly impossible to eat while seated for a game. So in that spirit, our resident weird food connoisseur, the Corn Correspondent (Corn-espondent, as so many of you wish we called it, but damn it is too difficult to say out loud), Andy, will be doing a weekly food blog where he combines ingredients from two different teams randomly selected each week and gives you the recipe here each Friday during the season. Here is the Week Zero, aka Week 1 Edition.

Chicken Fried Steak Biscuit Sandwich and Frozen Cheerwine Margarita
I don’t live in the territory, but one of my favorite things about flying through the Charlotte airport is being able to stop at Bojangles for a chicken biscuit. I wanted to take that delicious sandwich and find a way to incorporate the state of Texas (Texas two weeks in a row?). Yeah, that’s just how it works out…). So I decided to use a chicken-fried steak.
German immigrants to the state took their schnitzel and adapted it for Beef Country, giving us the chicken fried steak. Chicken and Chive gave me a recipe for Bojangles copycat biscuits. I was surprised to see confectioners sugar in the recipe, but I decided to go with it. I was also nervous about this recipe because the last time I tried to make biscuits, they never rose! Luckily this opportunity went better otherwise I would have had to get a can of Pillsbury.

Mmmmm biscuits
Anyway, with the biscuits made it was time to move onto the chicken fried steak. Once again, AllRecipes came through with a recipe for me to try. Like the recipe said, I made gravy with the remnants in the pan, but I didn’t use them here. It’s just good to have gravy on hand….you never know when you’ll need it.

batter those steaks

The chicken fried goodness.
Instead, as a condiment, I decided to lean more into North Carolina with a vinegar style bbq sauce! A Fork's Tale gave me one to work with, and now I’ve got a mason jar’s worth to work with. I guess I’ll have to start smoking some pork butts to use this up! I split a biscuit, grabbed the steak, and topped it off with some sauce.
Overall, this was okay. The sauce was tart enough to cut through the heaviness of a fried steak. However, the steak was a little too chewy for me to enjoy it as a sandwich. Oh well, they can’t all be winners, and I’ll be happy with just “okay”!

The Finished product
So now that we’ve gotten breakfast out of the way, let’s move to something for later on in the day. The fine folks of North Carolina love to talk about Cheerwine and how it is their favorite soda. And Dallas is home to the first frozen margarita. Why not mix the two and enjoy yourself a nice frozen treat? The recipe for this was super simple.
- 1oz tequila
- ½ bottle Cheerwine
- 2ish cups of ice
Add all these into a blender and blend until it forms a slushie consistency. Pour into a salted glass and enjoy!
